Adulteration of butter by manufacturers is almost exclusively done by churning the butter so as to contain more than the legal maximum of sixteen per cent water or by adding salt to the extent that the fat content of the butter is reduced below the legal minimum of eighty per cent.

Adulteration by the addition of fat other than that of milk, in so far as practised, is usually performed by mixing butter already manufactured with foreign fats.
